Portobello Mushrooms with Stilton Cheese
Portobello mushrooms provide an excellent foil for the tangy Stilton cheese. Great as a starter or light lunch.
Ingredients:
2 Portobello mushrooms, 2 garlic cloves, 1 small bunch of fresh parsley, Olive oil, Stilton cheese, Rocket or mixed baby leaf salad, Lemon Salt & freshly ground black pepper
Method:
Heat oven to the highest temperature and grease a baking tray with a little olive oil.
Wipe mushrooms with a piece of paper roll.
Finely chop the garlic and parsley and mix with a little olive oil.
Season the mix then spread over the mushrooms. Bake in the oven for 8 – 10 mins.
Meanwhile, crumble the Stilton into small pieces and sprinkle over the mushrooms. Bake for a further 3-4 mins.
Prepare a bed of salad leaves on each plate and drizzle with a little olive oil, a squeeze of lemon and some freshly ground black pepper.
When the Stilton has melted, serve the mushrooms immediately on top of the salad leaves.
