This quick and easy recipe includes some unusual ingredients for a stir fry to give it a new twist!
½ cup of cooked brown rice
¼ cup of non-fat ricotta cheese
1 diced chicken breast
¼ cup baby bella mushrooms
½ cup spinach raw
1 tbsp olive oil
1 tsp Cholula Hot Sauce
Prep: In a non-stick skillet, brown chicken with a tbsp of olive oil. Turn off heat and add rice, spinach, mushrooms, and ricotta, mixing thoroughly and cover. Let stand for about 5 minutes. Stir again and salt and pepper to taste.
