Summer Veggie Bake

This recipe gathers the best flavors of summer veggies in a healthy and easy side dish.

1 medium zucchini
1 medium summer squash
2 large tomatoes
20 basil leaves
1/4 cup olive oil
1 cup panko bread crumbs
1/2 cup parmesan cheesePREP:
Quarter zucchini and summer squash and lay as thin as possible on baking dish. Drizzle half of your olive oil over these veggies. Thinly slice tomatoes and layer on top of other veggies.  Sprinkle bread crumbs and parmesan on top, and add rough chopped basil. Drizzle remaining olive oil and bake at 400 degrees for 30 minutes.

Serves 4 to 6 as side dish.
