There’s nothing like a refreshing cold drink on a hot summer night. This one should do the trick. Serves six.
Ingredients:
- 9 oz light rum
- 8 sprigs spearmint leaves
- 3 limes
- 12 oz. simple sugar or
- 1/2 cup sugar
- 1/2 liter club soda
Prep:
Lightly muddle mint leaves and lime in a tall glass. Cover with simple syrup or sugar and fill glass with ice. Add rum and club soda; stir well. Garnish glass with lime wedge and springs of mint.
Making simple syrup:
2 parts sugar to 3 parts water. Mix sugar well with hot water until dissolved. Stores well in a closed container for several weeks.
Side note: I like to use lots more rum and lots less club soda…way more better! And simple syrup is much better than sugar.
