Vegetable and Date Couscous

1 1/2 Cup Vegetable Broth
1 1/2 Cups Couscous
1 Onion-diced
1 Red Pepper-diced
1 Zucchini-diced
1/2 Cup Dates-diced
1/4 Cup Coriander-chopped
4 Tablespoons Olive Oil
1/2 Tablespoon Paprika
1 Teaspoon Cumin

Saute onion, add zucchini and red pepper and cook two minutes. Bring broth to a boil and add all ingredients. Remove from heat, cover and let stand five minutes. Add coriander and fluff with a fork. To make it a meal, add chicken.
