Post Crossing Atlantic east to west, best time?

Hello everyone, I guess this question has been asked a zillion times, but here go's anyway:

I intend to in the future to sial from Gibralter down to the Cannaries then accross to the Caribean, what are my time limits to do this and aviod the worse weather.
My intention was to stay in the caribean for a while then sail down to New zealand.
